Anyone have healthy Dominican recipes for me?

I'm doing nutrition education in areas of poverty in the Dominican Republic next month. I'm responsible for cooking demos and of course, they need to be healthy. I do not have oven access and i'm uncertain of refrigeration, so I prefer not to use things that are really perishable. I only have a small burner to cook on. Anyone have recipes I can use that are healthy, cheap, and can accommodate the above criteria? It needs to be something people in the Dominican Republic will eat and can afford, so it wouldn't be a good idea to make them American food.
